Sweet Treat: Cinnamon Rolls!

Who doesn't love Cinnamon Rolls?! These barely last 2 days in our house.
I'm sure you, your mom, or whomever will love these!

This based off a recipe from American-scandi girl, Nevada Berg!

Here’s your shopping list:
Yeast - 17g dry active
Milk - 2 1/2 cups
Sugar - 1/2 cup for rolls & 1/2 cup for filling
Salt - 1 teaspoon
Flour - 7 cups
Butter - 2/3 cup for rolls & 3/4 cup for filling
Cinnamon - I also add in cardamom because it’s my favorite!
Coffee: - My personal favorite is Costa Rican!

Here’s how to do it:
In a saucepan, slowly melt butter into milk until it’s lukewarm. In a bowl add together yeast, sugar, salt, and flour then pour butter/milk mixture overtop. Now you’ll mix it all together and knead the dough until it’s soft. If you don’t have a mixer this step will take a while and some elbow grease — I’ve done it myself, trust me it’s worth the arm burn. Place aside in a warm spot to rise for about an hour!

Now for the filling! Take half the butter and mix in sugar and spice to taste. Personally I prefer cardamom to cinnamon so I tend to load up on it.

Roll the dough out on a floured surface into a big rectangle (aim for 18”x24”). Spread the paste evenly across the entirely surface of dough using a spatula, back of a spoon, or clean fingers! Roll the long side of the dough inward to form a log and use a sharp knife to slice into 20 or so even pieces. Lay these out on a cookie sheet or two to rise AGAIN for 40 minutes.

Bake these bad boys at 450F for ten minutes AND dig in!

 

Eggs Benedict! Something Savory to offset the sweet!

Here's your shopping list:
Eggs 2-3 per plate
Brioche Buns
Mustard or Mustard Seasoning - Tablesppon
Lemon Juice - Teaspoon
Egg Yolks 4
Butter 1 stick

Here's how to do it:
In a bowl add 4 egg yolks along with a teaspoon of lemon juice. In a microwave safe measuring cup melt 1 whole stick of butter. Once the butter has been melted and while it's still hot add it into the egg yolk and lemon juice mix. With a mixer begin mixing until it thickens. While you mix, add in any seasoning you'd like! I use mustard seasoning, paprika, and parsley. 

Cook your 2-3 eggs, sunny side up, while you butter and toast the brioche buns. 
My favorite way to cook the eggs is in a small cast iron skillet with a healthy amount of butter and with a like covering the pan to cook the eggs faster.

Once done, serve with the eggs placed on top of the brioche buns, and coat them with a healthy serving of hollandaise sauce! Salt and pepper to taste.
